Kourtney’s Apple Chips – Makes 16 Sandwich Cookies

Starting off strong with a vegan, gluten-free, and dairy-free recipe! Kourtney says her favorite cookie of all time is the Chocolate Karma cookie from Karma Baker in Westlake Village, California. Lucky for us, she shared the secret to making them on her website.

Ingredients:

  • Cookie Dough
    • 3 cups organic gluten-free flour
    • 1¼ cups organic cocoa powder
    • ½ cups Arrowroot Powder or Tapioca Starch
    • 2 tsp. baking soda
    • ½ tsp. salt
    • 2 cups organic evaporated cane juice
    • 1¼ cups coconut oil, refined, unscented, and warmed/melted before measuring
    • ⅔ cups applesauce, room temperature or warmed
    • 2 tsp. vanilla
  • Filling
    • ½ cup organic palm shortening
    • 2 cups organic powdered sugar, sifted
    • 1 tbsp. rice milk
    • ½ tsp. vanilla

Directions:

  1. Combine dry ingredients in a bowl. Stir to mix. Set aside.
  2. In a stand mixer, combine cane juice, warm coconut oil, warm applesauce, and vanilla. Mix on low until sugar is dissolved, 2 to 3 minutes.
  3. Slowly add in the dry ingredients and mix on low until the dough comes together and all of the ingredients are combined. Wrap dough in plastic wrap and refrigerate for 15 to 30 minutes.
  4. Preheat oven to 350°.
  5. Clear work area and create space to roll out dough.
  6. Roll dough to ¼” thickness and cut out 2” circles. Place circles on parchment-lined cookie sheets. Cookies will not spread much so 1” apart is fine.
  7. Bake for 7 to 9 minutes. Cool completely on a wire rack.
  8. To make the cream filling, use a whip attachment on your mixer, and beat the palm shortening at high speed, until light and fluffy and doubled in size, about 3 to 5 minutes. Slowly add in the powdered sugar and rice milk, and mix until incorporated. Add vanilla.
  9. On cooled cookies, spoon out 1 tablespoon of cream filling onto ½ of the cookie sides and cover with opposing cookie. Allow to cool in the fridge to set.

Kylie’s Cinnamon Roll Waffles – Serves 1 | Total Time: 8 Mins

When she isn’t being a SuperMom, Instagram Model, and Business Woman, she is spending time letting her secret talent show when she cooks. Not only are these going to taste delicious on a summer night when you sit around the fire, but it is also a super easy recipe to follow.

Ingredients:

  • Waffle Maker
  • Non-Stick Oil Spray
  • Cinnamon Rolls

Directions:

  1. Gather the necessary ingredients: a waffle maker, some non-stick oil spray, and a package of cinnamon rolls!
  2. Heat up your waffle maker, and don’t forget to spray it with non-stick oil first! Then, open up your can of cinnamon rolls (Kylie suggests Pillsbury cinnamon rolls because they’re her “fave”) and set the accompanying icing aside.
  3. One at a time, take each cinnamon roll and place it in the center of your waffle maker and close the lid. Let it cook for 3-4 minutes, but feel free to adjust the time as needed based on your waffle maker. Repeat this process until you have as many cinnamon roll waffles as your heart desires!
  4. Heat up the icing cup in the microwave for 10-15 seconds and drizzle the icing over each cinnamon roll, and dig in!

Kris’s Rice Pilaf – Serves 8 to 10

Most grandmas are obsessed with making sure their grandbabies are fed, and Kris Jenner is no different. She says, “All three of them [Mason, Penelope, and North] right now are in love with my pilaf.” If you’re wondering what the Kardashian/Jenner babies eat like, keep on reading.

Ingredients:

  • 1/2 cup blanched silvered almonds
  • 3 tbsp. unsalted butter
  • 1½ cups vermicelli, broken into 1½ to 2-inch pieces
  • 2 cups long-grain rice
  • 3½ cups reduced-sodium chicken broth, heated to steaming
  • 1½ tsp. kosher salt
  • ¼ tsp. freshly ground black pepper
  • ½ cup seedless raisins

Directions:

  1. Heat a medium skillet over medium heat. Add the almonds and cook, stirring occasionally, until toasted, about 3 minutes. Transfer the almonds to a plate. Set aside.
  2. Heat the butter in a medium saucepan over medium heat. Add the vermicelli and stir constantly until it is lightly toasted about 1 minute. Add the rice and stir constantly until most of the rice turns chalky white, about 1 minute more. Add the chicken broth, salt, and pepper and bring to a boil over high heat. Reduce the heat to medium-low and cover the saucepan tightly. Simmer until the rice is tender and has absorbed the liquid, about 18 minutes.
  3. Remove from the heat. Add the toasted almonds and raisins (do not stir them in) and cover the saucepan again. Let stand for 5 minutes. Fluff the pilaf with a fork and transfer it to a serving bowl. Serve hot.

Khloe’s Homemade Ramen – Serves 6 | Total time: 45 Mins

Khloe loves making her very own ramen because she has control and does not have to resort to buying processed/packaged stuff. Khloe has done the easy work for us by sharing her very own easy recipe for ramen. “It’s such a comforting dish that always hits the spot and it’s actually pretty easy to make yourself.” We can’t wait to try it for ourselves!

Ingredients:

  • 3 Tbsp. canola or vegetable oil
  • 1 medium yellow onion, roughly chopped
  • 4 cloves garlic, peeled and finely chopped
  • 1 medium piece fresh ginger, peeled and chopped
  • 8 cups low-sodium chicken broth
  • 4 oz. cremini or button mushrooms, cleaned and sliced
  • 3 cups boneless, shredded cooked chicken
  • Low-sodium soy sauce
  • Sesame and/or chili oil
  • Pinch of salt
  • 1½ lb. fresh, unseasoned ramen noodles
  • 6 eggs (optional)
  • 4 green onions, white and light green ends, finely chopped

Directions:

  1. Warm 2 tablespoons of the oil in a large saucepan over medium-high heat. Add the onion and season lightly with salt. Cook until browned, about 5 minutes. Stir in the garlic, ginger, and broth. Deglaze the pan by stirring and scraping up any browned bits from the bottom. Reduce the heat to medium-low. Partially cover the pan with a lid and simmer for about 30 minutes.
  2. Strain the broth through a fine-mesh sieve into a bowl.
  3. Bring the large saucepan to medium heat and add the remaining 1 tablespoon of oil. Add the mushrooms, stirring until tender. Add the chicken and stir to combine. Add the broth and season to taste with soy sauce and sesame oil (if you like heat, use chili oil!). Bring to a simmer, then reduce heat to low. Cover partially and simmer for about 3 minutes.
  4. If using eggs, immerse into a pot of boiling water and simmer for 5 to 6 minutes. Remove the eggs from the simmering water, and run under cold water for 1 to 2 minutes until cool enough to peel.
  5. Cook the ramen noodles according to the package directions.
  6. Divide the noodles evenly among individual bowls. Ladle the broth and chicken over the noodles, dividing them evenly, then sprinkle with the green onions. If desired, top each bowl with an optional halved soft-boiled egg and serve right away.

Kim’s Banana Pudding – Serves 8 | Prep Time: 10 Min | Cook Time: 30 Mins

Are you ready to enjoy the tropical vibe of summer? Kim K has invited us into her world with a Snapchat of her in the baking world. This is one of Kim K’s favorite pudding recipes, and honestly, who can blame her? Get ready to be the talk of the summer with your fantastic baking skills.

Ingredients:

  • 4 large eggs
  • ¾ cup of sugar
  • 3 tablespoons all-purpose flour
  • ½ teaspoon plus a pinch of salt
  • 2 cups of milk
  • ½ teaspoon vanilla extract
  • 30-40 vanilla wafers
  • 3-4 medium-ripe bananas

Directions:

  1. Separate the yolk from the whites of 3 eggs; set aside the whites. Add the remaining whole egg to the yolks.
  2. In a saucepan, whisk together ½ cup sugar, flour, and ½ teaspoon salt. Stir in the whole egg and 3 yolk mixture then stir in the milk. Cook uncovered, stirring often until the mixture thickens. This should take roughly 10 minutes.
  3. Remove from the heat and stir in the vanilla
  4. Preheat the oven to 220 degrees C/428 degrees F
  5. Spread a thin layer of the pudding in a casserole dish. Arrange a layer of vanilla wafers on top of the pudding. Thinly slice the banana crosswise and arrange a layer of banana slices over the wafers. Spread 1/3 of the remaining pudding over the bananas and continue layering the wafers, bananas, and pudding until the pudding mixture is gone. Finish with pudding
  6. To make the meringue, beat the reserved egg whites with a pinch of salt until they are stiff. Gradually beat in the remaining ¼ cup sugar and continue beating until the whites will not slide out of the mixing bowl when it is tilted.
  7. Spread the meringue over the pudding with a spatula and bake for roughly 5 minutes until the meringue is lightly browned.
